Roasted Garlic Cottage Cheese Dip

This creamy roasted garlic cottage cheese dip is rich, savory, and naturally high in protein. Roasting the garlic in ghee brings out a mellow, slightly sweet flavor that blends beautifully with smooth cottage cheese for a simple but flavorful dip.

Ingredients

  • 1 garlic bulb (for baking in ghee)
  • 1 tablespoon ghee
  • 1 cup cottage cheese
  • 1 tablespoon whole grain mustard
  • 1 teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ teaspoon oregano
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon lemon juice (freshly squeezed)
  • 2 tablespoon fresh parsley

Instructions

  • Roast the garlic.
    Preheat oven to 375°F (190°C).
    Cut the top off the garlic bulb to expose the cloves. Place it in a small oven-safe dish and spoon the ghee over the garlic. Roast for 25-30 minutes, until the cloves are soft and fragrant. Let cool slightly, then squeeze the roasted garlic cloves out of their skins.
  • Blend the cottage cheese.
    Add the cottage cheese to a bowl or container and blend using an immersion blender until smooth. Let it sit for about 30 seconds, then blend again briefly to achieve a creamier texture.
  • Add remaining ingredients.
    Add the roasted garlic cloves, whole grain mustard, olive oil, lemon juice, sea salt, black pepper, red pepper flakes, parsley, and oregano.
  • Blend until creamy.
    Blend again until the dip is smooth and well combined. Scrape the sides if needed to ensure everything is evenly incorporated.
  • Taste and adjust.
    Taste the dip and adjust seasoning if needed. Add more lemon juice for brightness or additional salt or pepper to taste.
  • Serve.
    Transfer the dip to a serving bowl and enjoy immediately, or refrigerate for 20–30 minutes to allow the flavors to develop.

Notes

  • Blending the cottage cheese first helps create a much smoother dip texture.
  • An immersion blender works best, but a small food processor or blender can also be used.
  • This dip pairs well with fresh vegetables, crackers, toasted bread, or as a spread for sandwiches and wraps.
  • Store the dip in an airtight container in the refrigerator for up to 3–4 days. Stir before serving if it thickens slightly.
  • I do not recommend freezing this dip because cottage cheese has a delicate structure and freezing might cause the dip to separate once thawed.
