When I roast the garlic in ghee, I know that the sharp flavor of raw garlic will be transformed into something soft, mellow, and slightly sweet. Here is how I roast the garlic for this recipe:

Step 1: Preheat the oven to 375°F (190°C). Cut the top off a whole garlic bulb so that the cloves inside are exposed. This will help the garlic to cook evenly.

Step 3: Transfer the dish to the oven and roast for about 25-30 minutes, or until the cloves are soft, golden and fragrant.

Once roasted and cooled down, the garlic is ready to be added to the blended cottage cheese dip.

Step 1: Blend the cottage cheese. Add the cottage cheese to a bowl and blend it using an immersion blender for about 15-20 seconds, then let it sit for about 30 seconds. After that, blend again briefly until the texture is smooth. This pause between blending helps the cottage cheese blend more evenly.
