Recipe Ingredients

Ground beef: I used lean ground beef here. For extra flavor, you could use a mix of ground beef and ground Italian sausage.
Onion + garlic: The flavor builders. Chop them up finely so cook quickly.
Marinara sauce + tomato paste: The base for the lasagna soup. You can also use pasta sauce, like I did when I made my cheesy meatball sliders.
Beef broth: Choose low sodium beef broth to have more control over the amount of seasonings you're using.
Seasonings: I used cayenne, paprika, Italian seasoning, dried oregano, fennel, basil, pepper and some salt.
Lasagna noodles: Stick to regular lasagna noodles. No-boil noodles are a no-no for this recipe.
Heavy cream: To balance out the flavors and to get that rich, creamy flavor.
Toppings: Parmesan, spinach and parsley. You can get creative and try other toppings too.
See the recipe card below for exact quantities.
Recipe Variations, Additions, and Substitutions
- Vegetarian-friendly: Omit the meat and use vegetable broth instead of beef or chicken broth to make the lasagna soup vegetarian-friendly. You can also add more vegetables like bell peppers, mushroom and zucchini for added texture and flavor.
- Gluten-free: Use gluten-free lasagna noodles or substitute them with another gluten-free pasta of your choice to make gluten free one pot lasagna soup.

Recipe Tips & Tricks
- To make a lighter version of the recipe, you can swap the ground beef for ground turkey or chicken works too.
- Adjust the broth quantity depending on how thick you want your soup. Use less broth for a stew-like consistency, or more for a soupier one.
- Use freshly grated Parmesan cheese for the best flavor. Adding a dollop of ricotta cheese when serving can also elevate the dish.
- Use beef bone broth to lend the dish a nice protein boost. I did it when I made my ground beef and rice casserole and it turned out SO good.
Serving Ideas & Suggestions
This TikTok viral one pot lasagna soup tastes best when served with garlic bread or a crisp green salad. I love pairing it with some garlic green beans with Parmesan or my spinach, strawberry and fennel salad.

Recipe FAQs
Absolutely! While ground beef is traditional, you can substitute it with ground chicken or even turkey for a lighter version.
Transfer your leftover lasagna soup into an airtight container and refrigerate for up to 2 days.
You can reheat the leftovers in a pot over medium heat until nice and warm. Avoid using the microwave as it can cause the cream to split.
